Rice and Lentil Pilaf Ingredients: * 2 teaspoons olive oil * 1/2 cup onion -- chopped * 2 cloves garlic -- crushed * 2 3/4 cups low-sodium vegetable broth * 3/4 cup brown rice -- uncooked * 1/2 cup lentils -- uncooked * 1 teaspoon curry powder * 1/4 teaspoon ground cumin * 1/4 teaspoon ground ginger * 1/4 teaspoon ground allspice * 1/4 teaspoon salt * 1/4 teaspoon pepper Directions: Mix all ingredients in crock pot. Cook on high 4 hours or low 6 hours.

Red Bean & Quinoa Chili Ingredients: 1 can kidney or black beans 3 cups water 2 tsp ground cumin 1 tbsp extra-virgin olive oil 1 medium onion 2 tsp sea salt 2 cloves garlic, minced 1 large green pepper, chopped 1 tsp dried oregano 1/4 tsp ground cinnamon 1/8 tsp cayenne 2/3 cup quinoa 1 cup fresh or frozen corn 1-2 cups organic tomato sauce Instructions: Use rice cooker. Put guacamole on top. ENJOY!!

Drunkin’ Beans I always cook fun, easy foods from recipes that anyone can do! Ingredients: • 1 onion • 1 green pepper • 2 tbsp chili powder • 1 tsp oregano • 1/3 cup cilantro • 3 tbsp honey • 1 tsp sea salt • 4 cans pinto beans • 1 mexican beer Instructions: Sauté’ the onions and pepper in a tbsp. olive oil and a tbsp. water for 5 minutes. Add the rest of the ingredients and simmer for 20-30 minutes. Serve with guacamole. www.YostFamilyChiropractic.com
