Shallot Gochujang Noodles with Pan Seared King Oyster Mushrooms 🍜🍄
Small king oyster mushrooms are sliced in half then scored to create a ‘cross-hatch’ pattern before being seared on a pan to get a nice brown exterior. The sauce is made by reducing the flavors from the pan with vegan butter, gochujang, and a few other seasonings to create a tasty sauce to coat the chewy knife-cut noodles. Top the seared mushrooms over the noodles and you have yourself an incredibly tasty bowl packed with many different textures and flavors.

This Creamy Mushroom Udon is vegan, dairy-free, nut-free, and super comforting! This recipe is a fusion of my love for creamy pasta dishes and umami-packed Japanese ramen and noodles. This recipe doesn’t use cream nstead uses milk for a lighter yet still creamy finish so it’s rich but not too heavy—just right for my liking. I used a mix of fresh shiitake and white shimeji mushrooms add a lot of umami, texture, and flavour to these noodles.
MISO UDON NOODLE SOUP (VEGAN RECIPE) 🍄🍜
A comforting Miso Udon Noodle Soup with a rich broth topped with Teriyaki Mushrooms. The broth is packed with umami and gets a nice richness from the mix of soy milk, miso, mushroom broth, and some vegan butter. Serve this with other toppings of choice. I finished my bowl with Japanese chili oil or layu for an extra kick of heat. This recipe can be easily cooked in one pot by preparing the noodles and toppings before cooking down the broth.
