When you just have this recipe vision in your mind and then it comes to life.. This was ELITE!!!
INGREDIENTS
• - 500g Gnocchi
• - 2 Garlic cloves (minced)
• - 1/2 Jar of Sun-dried tomatoes (chopped)
• - 1 tbsp Tomato purée
• - 2 tbsp Milk or Cream
• - 1/2 tsp Salt
• - 1 tsp Dried Basil
• - 1 tsp Oregano
• - 1/4 cup Parmesan cheese
• - Splash of pasta (gnocchi) water
• - Loads of Mozzarella
METHOD
• - Boil and prepare the gnocchi as per the packet instructions
• - In a pan, sauté garlic and sun-dried tomatoes in sun-dried tomato oil. Then add the tomato purée, milk/cream, the seasonings, parmesan and mix well.
• - Toss in the boiled gnocchi with some pasta water and mix well.
• - Top it up with loads of mozzarella cheese and bake at 180C for 10-15 mins or until the chees
