◉ Ingredients
1 tbsp baking soda (for washing the lemons)
• 2 tablespoons lemon zest ( divided )
• 3 cups fresh lemon juice (12 lemons)
• 3 cups water
• 2 cups granulated sugar
• 1 1/2 cups packed fresh basil ( 30g )
• 1/4 tsp kosher salt
• ◉ Cooking process
• 1. Wash the lemons using baking soda.
• 2. Prepare lemon zest and fresh lemon juice on the side.
• 3. Put water, sugar and lemon zest (1 tbsp) in a medium saucepan. Set over medium-low heat.
• 4. Cook mixture until the sugar is fully dissolved.
• 5. Remove from heat. Add the clean washed basil and salt.
• 6. Stir with a whipper for a few minutes to dissolve the salt and for the aroma of basil.
• 7. Add the lemon juice and stir well, cool to room temperature, cover and refrigerate at least 3 hours or overnight.
