Coconut Apricot Grain-Free Granola: 2 c Coconut Flakes, 1/2 c Dried Apricots, 2 T Coconut Butter, 2 T Maple Syrup, 1 t Cinnamon, 1/8 t Sea Salt - Line a baking sheet with parchment. Gluten-Free Lemon Oat Bars
Ingredients: 1 c oat flour, 1/3 cup oil, 1/2 cup honey (divided), 1/2 tsp salt (divided), 6 eggs, 2 tbsp coconut flour, 1 tbsp lemon zest, 1/2 cup lemon juice - Preheat oven to 350°F & prep an 8x8 pan with parchment. Mix oat flour, oil, half the honey, & half the salt to form a dough. Press into the pan & bake for 15 mins. Blend eggs, coconut flour, lemon zest & juice, remaining honey & salt. Protein Packed Green Pancakes: 2 c oats, 2 c baby spinach, 1 c Oat Milk, 1 ½ c applesauce, 2 eggs, 2 tsp Baking Powder, 2 tbsp oil for cooking ☘️ Add the oats to a blender and blend. Add spinach, milk, applesauce, egg, and baking powder. Blend until smooth. Heat oil over medium heat. Sheet Pan Fajitas
Sheet Pan Fajitas - A quick and easy meal - Ingredients: 2 tbsps Extra Virgin Olive Oil, Fajita seasoning (1 tbsp Chili Powder, 1.5 tsp Smoked Paprika, 1/2 tsp each of Cumin, Garlic Powder, Oregano, Sea Salt), 1 1/2 lbs Boneless Skinless Chicken Breast, sliced thin, 1 Yellow Onion, sliced thin, 3 Multicolor Bell Peppers, thinly sliced - Preheat your oven to 400ºF (205ºC). Mix the seasonings. Toss the chicken and veggies with oil and seasoning. Spread evenly on a sheet pan and bake for 20 minutes. Serve over rice or with gluten-free tortillas.
